Recipe Time: Coriander, Lime & Garlic Dressing

Coriander, Lime & Garlic Dressing
(2 cups)

A delicious simple recipe from Slow Down & Grow Something by Byron Smith & Tess Robinson, great with leafy green salads, tossed through boiled potatoes or pasta and as a dip with fresh sourdough :)

you need –
2 garlic cloves
55g coriander leaves/stems roughly chopped (can add in some mint)
Juice of 2 limes
3 TBLspns olive oil
2 TBLspns white wine vinegar
1/2 tsp sea salt
(opt. to add in a dollop of tahini for creeeeeeeminess, or some pine its for crunch)

you do –
blend all the above
keep in a sterilised jar in the fridge for up to 3 weeks
